Sunday School: The Art of Food Preserving, Giardiniera

Have you ever wandered through the farmer’s market and been taken in by the beauty of the bounty, or maybe your own garden is giving a little too much? Giardiniera (the Italian word for mixed vegetable pickles) is a wonderful way to preserve all that produce that can’t be eaten fresh. This mixed pickle can be made with whatever is on hand or abundant; and is a great addition to relish trays or a colorful appetizer. These pickles can also be added to salads for brightness and a punch of flavor. In this class, Durant Culinary Director Eric Bartle will guide students through the process of cleaning and preparing vegetables in season, as well as brine and jar preparation for canning the pickles. So settle in with your glass of wine and get inspired to keep your summer bounty kickin’ into the winter! Students will enjoy a glass of wine as they sample the pickled vegetables and leave with a simple brine recipe that can be adjusted for taste to preserve whatever you have on hand at home.
