Tuscan Breakfast CasserolePrepare a hearty breakfast to share with family or to dish up at brunch with friends. This easy casserole builds upon layers of flavor in a delicious dish. It starts with plenty olive oil and sauteed vegetables, with eggs serving as the base to hold it all together. Feel free to customize this casserole to your liking, swapping out any of the veggies or adding diced ham or sausage into the mix. This quick and easy chili is made in one pot and requires very little prep. With plenty of garlic, ground beef, tender sweet potatoes, and black beans, it’s filling for a cool evening. This quick and easy dish is the solution. Use a large, thick zucchini as the base for a chicken parmesan-inspired recipe. While this option is vegetarian, you could easily mix ground beef or ground turkey into the sauce for added protein.
