No matter the season, a big hearty salad is sure to please. Even better? If you make a homemade dressing using simple ingredients to enhance its flavor. This salad starts with a base of kale and cabbage, with plenty of fresh fruit to dress it up. To complement the base ingredients, whisk together a lemon-fused dressing to pour over top. It’s packed with flavor and is nothing short of eye-catching with every color of the rainbow in one bowl. Recipe provided by Molly Allen.
- 7 tbsp Durant Lemon Fused Olive Oil
- 2 Garlic cloves, minced
- 1 Lemon, zested and juiced
- 2 tbsp Honey
- 1 tsp Salt
- ¼ tsp Black pepper
- 3 cups Kale, chopped (about 1 bundle)
- 1 cup Purple cabbage, shredded
- 1 cup Chickpeas
- 4 Radishes, sliced
- ½ Orange, peeled and sliced
- ½ cup Blueberries
- In a small bowl, whisk together 6 tablespoons Durant Lemon Fused Olive Oil, minced garlic, lemon juice and zest, honey, salt, and pepper.
- In a large bowl, add the kale and remaining 1 tablespoon lemon olive oil. Use your hands to massage the kale.
- Add in the cabbage and chickpeas. Add in the sliced radishes, orange slices, and blueberries.
- Pour the dressing over the salad and toss to combine before serving.
