Creamy Pesto Bean Salad

You’ll only need a handful of ingredients and a few minutes to put together a creamy dense bean salad packed with flavor. This recipe makes use of Durant Basil Fused Olive Oil to take a quick pesto dressing to the next level. Pour all of your ingredients into a big bowl, add the dressing, and stir to combine. You have the perfect salad on the table for summer gatherings or even to save as an easy grab-and-go lunch in no time.

For the Dressing
 ¾ cup Durant Basil Fused Olive Oil
 ¼ cup de-shelled pistachios
 Juice of half a lemon
 1 tsp garlic powder
 ½ tsp salt
For the Salad
 4 cups arugula
 2 cans Great Northern Beans (or other preferred white bean)
 ½ cup cherry tomatoes, sliced
 ¾ cup cucumber, chopped
 Grated parmesan, for garnish

In a food processor, add the Durant Basil Fused Olive Oil, pistachios, lemon juice, garlic powder, and salt. Pulse until smooth.

In a large bowl, combine the arugula, beans, cherry tomatoes, and chopped cucumber. Toss with the dressing.

Garnish with grated parmesan if desired and enjoy!
