Olive Oil Cocoa Crisps

 ¼ cup Durant Mission Olive Oil
 ¾ cup Sugar
 Extra sugar for rolling
 1 Egg
 2 tbsp Local honey recommended
 ¾ tsp Vanilla extract
 ¼ tsp Salt
 ¾ cup All-purpose flour
  cup Cocoa powder
 ½ tsp Baking soda

Mix Mission Olive Oil, sugar, egg, honey, vanilla and salt until combined.

In a separate bowl, combine dry ingredients until combined.

Mix combined dry ingredients into wet mixture to form a soft dough.

Scoop out cookies with your smallest cookie scoop (we recommend 1/4-ounce scoop) and place on a cookie sheet, chill for at least 20 minutes. *Don't skip the chilling, it helps minimize how far the cookie spreads out while baking.

While the cookie dough is chilling, preheat oven to 350°.

Place some sugar in a shallow bowl and roll the balled cookies in the sugar.

Place cookies at least 2 inches apart (allow more room if using larger scoop) and bake for 10-12 minutes.

As the cookies cool, they become quite crisp. Bake these cookies the day you want to enjoy them in order to retain crispness.
