Orange & Herb Marinated Olives

Durant orange fused olive oil is the star of our marinated Castelvetrano olives offered year round in the Durant Tasting Room. Now you can make them at home with just a few simple ingredients! Delicious on their own as a simple wine snack or accompaniment to a charcuterie plate, we also think these orange and herb marinated olives are great alongside a Simple Roasted Chicken or grilled lamb loin, in your favorite pasta salad, or roughly chopped and added to the Italian inspired Salsa Verde recipe found in our Durant Mother Sauce collection.

 2 cups Castelvetrano (or your favorite olive), drained of brine
 10 Fresh thyme sprigs
 3 Fresh bay leaves
 1 Orange, zested or thinly peeled (pith removed)

Drain olives of brine and transfer to small bowl.

In a small sauce pot or sauté pan, add the Durant orange olive oil, herbs and orange zest.

Slowly warm the oil and aromatics on low until a thermometer reads 120F.

Pour the warm infused Durant orange olive oil (with all of the herbs and zest) over the drained olives and let marinate for a least one hour before enjoying on their own or alongside a simple herb roasted chicken (recipe follows)!
